As Miami continues to boom and bring in international talent to man the stoves of top restaurants, it's not just high-dollar downtown restaurants that are opening. When Vagabond Restaurant & Bar opens next month at MiMo's Vagabond Hotel, chef Alex Chang will bring with him a pedigree that includes time at Mexico's Pujol, LA's Animal, and Belgium's In De Wulf. Vagabond is the first collaboration between Chang, restaurateur Alvaro Perez Miranda, and financier Christopher Wang.
Per the group, "The concept for the restaurant is ‘casual fine dining' and was created to cater to the ‘contemporary vagabond,' a modern-day adventurer with a penchant for global food, drink, and art." Mantras aside, the menu will feature everything from a Kanpachi ceviche with quinoa and ponzu to a Vagabond burger served on a potato roll with American cheese and housemade bread and butter pickles. And diners can expect a cocktail bar serving up classics with a modern twist.
Tastings are already underway and the kitchen is complete. An official opening date has not yet been set. Stay tuned for details.
