As we inferred on Monday, there's a new executive chef at Soleà at the W South Beach. Marc Vidal, formerly of Por Fin in Coral Gables, is the man in charge now, as former executive chef Michael Gilligan will step away and move into a new position as executive hotel chef. Vidal's resume is an impressive one, with stints working under Ferran Adria at El Bulli, Alain Passard at L'Arpege and Alain Ducasse at Hotel Plaza Athénée.
