As part of its ingaugural Fish + Wine dinner on Thursday, February 25, Area 31's executive chef John Critchley isn't only preparing a four-course, wine paired dinner that just so happens to benefit the Marine Mammal Conservancy, but he's also playing tour guide on a VIP experience on the water. Limited to just 16 people, Critchley's four-hour tour includes lunch and a boat excursion on a private charter to Miami’s finest fishing markets. Critchley will also toss out tips on picking premium fish to be featured in the pairing dinner. VIP attendees will be treated to an exclusive area during the dinner’s cocktail reception that will include champagne, caviar and VIP-only food stations.
