Forget tearing down that wall. In 1984, Ronald Reagan declared July as National Ice Cream Month. Twenty, gasp, five years later, La Marea at The Tides will jump on that truck in a very big way. The Tides’ Coral Bar will evolve into an “Ice Cream Lab”, and the restaurant will offer a bona fide ice cream sommelier-- bartender, ice cream lover and biologist, Katherine Montero, who will oversee the ice cream laboratory, present selections and make recommendations to guests, tableside, from a mobile trolley stocked with ice creams and toppings. Forget mint chip. Among the flavors: Madagascar vanilla; dark chocolate; salty dulce de leche with popcorn; white sapote; currant & chocolate mole; strawberry & buttermilk; rum raisin; basil; maple syrup & bacon; dark ale; and mango & Thai red curry. The cart will be available seven days a week, but the scoop sommelier will only work dinner service Thursday through Sunday. [EaterWire]
