Bon Appétit's Andrew Knowlton has released his top ten new restaurants list, and it's heavy on the meat (and we do mean heavy — milk braised pork shoulder, anyone?) with some seafood places thrown in for good measure. Representatives from both coasts and a sprinkling of choices in the center of the country show a lot of Italian and Southern American influence. Miami, unfortunately, is conspicuously absent from the list, which includes:

· Menton, Boston
· Marea, New York
· Anchovies & Olives, Seattle
· Hatfield's, Los Angeles
· Ellerbe Fine Foods, Fort Worth

· The Purple Pig, Chicago
