Status: Opened on August 2, Amuse, the "sleek, small plates restaurant" on the 3rd floor of the Tempo Miami, A Rock Resort has a newly appointed execu-chef: Emanuel Zarlenga, whose culinary CV includes stints at The Ritz Carlton St. Thomas, The Ritz Carlton Pentagon City and The Four Seasons, Buenos Aires. Amuse features daily changing menus with dishes including scallop ”carpaccio”, black olives with lemon oil and lychees, a signature mofongo, organic vegetables ragout with potato espuma and Malbec wine essence, crispy rice oolong tea and jasmine rice sorbet. In keeping with the trend du jour, "the restaurant strives to serve the freshed organic, local and sustainable cuisine available."
