Joining Norman Van Aken at Tuyo, a soon to open restaurant ("an exquisite fusion of New World flavors," says its website) on the top floor of The Miami Culinary Institute at Miami Dade College: Norman's alumni, chefs Jeffrey Brana and Max Santiago. And unlike the unfortunate culinary debacle that was Norman's 180, Van Aken and co. will actually, definitely be there. They swear. [MRPR]
