Ritz-Kitchen-%40540-300x227.jpgAs of last week, Derin Moore, one of 65 Certified Master Chefs in the United States, joined Turnberry Isle Miami as the resort & club’s new executive chef. Derin most recently served as executive chef at The Ritz-Carlton, Resorts of Naples’. Derrin's CV is impressive: he's one of 12 master chefs to serve on the Culinary Institute of America's advisory board; has been recognized by the James Beard Foundation as an Outstanding Chef in American Cuisine; and was a member of the culinary Olympic Team from 1992-2000 winning 13 medals in world competitions. In other Turnberry food news, Michael Mina is in Miami this week to launch a new “sharing” section of the dinner menu at BOURBON STEAK. [EaterWire]

Hoisin glazed-Berkshire pork belly with sesame and jalapeno; a royal red shrimp ceviche with aji amarillo, cilantro and lime; foie gras hushpuppies complemented with a lavender honey butter; sashimi of the day accompanied by fresh wasabi, house-made ponzu and pickled cucumber; and a spicy Thai beef salad served with lettuce cups, a coconut vinaigrette and toasted peanuts. Range from $12-$16.
