Joel Huff, who trained at José Andrés' MiniBar in DC and was former Chef de Cuisine at Saam at The Bazaar by José Andrés in Beverly Hills, is now the new Chef de Cuisine at Azul at the Mandarin Oriental, Miami. Huff, who also worked at The Tydes Restaurant and Coral Cafe in Santa Barbara, will debut his new menu later this month. "The abundance of fresh ingredients found in South Florida is what will drive me in the process of creating the menu at Azul,” said Huff. “Once I figure out what direction the key ingredients are taking, for me it’s really about just letting them speak for themselves.” [EaterWire]
