kevinchef.jpgTop Chef season 7 winner Kevin Sbraga, working on opening his own resto in Philly, will be returning to his alma mater, Johnson & Wales in North Miami, as "distinguished visiting chef" of an open to the public dinner at 7 p.m. April 1.

The four-course dinner created by Sbraga kicks off with hors d'oeuvres such as lobster bruschetta and veal sweetbreads and continues with Caesar salad with sous vide chicken, fish & chips with a variation of tartar sauce and meatloaf garnished with chanterelles, bacon marmalade, pickled onion and truffle. For dessert, a banana split with strawberry confection, chocolate ganache and pineapple. The event, which is a scholarship fundraiser for the University’s College of Culinary Arts, is open to the public at $85 per person. Seats are limited. RSVP to 305-913-2108. [EaterWire]
