We guess the vegetarian Mac'n Food Truck raised the necessary funds it needed to jump start and this weekend it will make its debut at Palmetto Bay Village Center (17777 Old Cutler Road) for the Friday Night Food Trucks event from 5:30 p.m. to 10:30 p.m. "Opening this food truck has been quite an undertaking since we began last September," says co-owner Francesca Lacuesta.
