There’s soon to be yet another entry into South Florida’s already overheated coal-fired pizza arena. Houston-based Russo’s Coal-Fired Italian Kitchen is opening its first Florida restaurant this fall in Pembroke Pines in the same plaza as the newly opened Salsa Fiesta. The family-owned franchise is headed by 26-year-old Karla Tomas who has a background in hospitality and restaurant management. The new restaurant is part of a statewide expansion initiative. Russo’s said it plans to add two more Florida locations this year and 10 to 15 nationwide next year. Russo’s is a bit late to the table. Coal-fired pizza restaurants have been bubbling up like cheese topping all over South Florida. Among the better known is Fort Lauderdale-based Anthony’s Coal Fired Pizza, which has been opening restaurants nationwide. Scarfone’s Coal Fired Pizza also has a few locations in South Florida, including its newest in Davie.
