After opening 3800 Ocean at the condo/hotel Singer Island Marriot last January, Chef Dean Max is moving on. "Those condos are hard to work out. It was hard to logistically run my restaurant and have the hotel run the breakfast and lunch service out of the same kitchen." 3800 Ocean was similar to his restaurant in the Harbor Beach Marriot, 3030 Ocean, focusing on "modern American seafood", where it is assumed he will now spend all of his time.
