timon-balloo.jpg Johnson & Wales University North Miami is honoring Sugarcane Raw Bar's Timon Balloo as a Distinguished Visiting Chef at a dinner at 7 p.m., Friday, January 27. The dinner, open to the public, features 4-Balloo-created courses including golden beet salad, pan seared local fish, Mirin-braised short ribs and a Vanilla bean soaked brioche.
