Cory Lambert to Head the Kitchen at Swine

Yesterday Short Order announced that Cory Lambert is to be the Executive Chef of the soon-to-open Swine Southern Table & Bar, the pig-centric sister restaurant of Yardbird. Lambert will be heading to the Gables and take over for Kenny Gilbert, who was supposed to be head chef. Gilbert and the ever-growing 50 Eggs Restaurant Group (which now consists of Yardbird, Lime, Swine, Khong, and another new mystery project) parted ways back in early October, at which time 50 Eggs said they had hired an Executive Chef, which was always the plan, and Gilbert was to be more of a managing/overseeing presence. Looks like that said hired chef was Lambert. The "avid pork lover" (very suiting for Swine) was most recently Executive Chef at Trummer's on Main in Clifton, Virginia. Lambert got his degree in culinary arts from Johnson & Wales University, has worked under Norman Van Aken, and previously did stints at Pacific Time, Mark's, and Petrossian before heading to Virginia. Swine is said to be opening late this winter. Stay tuned for opening updates as it gets closer.
