Today Forbes released their 30 Under 30 list. For the Food and Wine sub-category of young talent changing the way we eat and drink, the three judges were: Union Square Hospitality Group founder Danny Meyer, South Beach Wine and Food Festival founder Lee Schrager, and Forbes editor Randall Lane. Two of the 30 selected individuals come from Miami: Roger Duarte of George Stone Crab (and partner in My Ceviche) and Giorgio Rapicavoli of Eating House.

Duarte, at 29 years old, has started the local and national stone crab delivery service based in Miami, George Stone Crab. His company sells claws that are less than 24 hours off the boat and has "become the largest distributor of Florida stone crabs to Latin America." Rapicavoli has his own Miami cult following from the now-permanent Eating House, but he's caught the attention of Forbes for other accolades as well. Rapicavoli is Miami's first winner of Food Network's "Chopped" and has appeared a few times on Slow Food's "Terra Madre" in Italy, with the likes of Alice Waters and Joshua Viertel.
