Drew Peterson, corporate beverage director of SushiSamba and SUGARCANE Raw Bar Grill, has said that “A carefully crafted cocktail, perfectly poured wine or sake should be an integral complement to the dining experience — but at its best, it should steal the show.” In sticking with his tradition for show stopping, Peterson created the Beet Spirit Beer Cocktail. This spin on the old-fashioned beer cocktail, combines beets with the delicious twist of St-Germain and is finished off with Belgian beer.
Says Peterson, "I think the drink speaks to Miami’s fresh and warm weather. The mix of earthy beets, refreshing beer, and complex notes of St-Germain plays to our local style. The cocktail offers a unique balance of flavors making it perfect for brunch, lunch, dinner or just hanging with friends."
Beet Spirit Beer Cocktail
1 oz. of beets soaked in rum**
1 oz. of St-Germain
4 oz. of Belgian beer
Fill a beer glass with ice, add the ingredients and stir well.
**Infusing Rum w/ Beets
Fill a large jar half way with sliced beets
Add one cup of sugar
Fill with one bottle of quality white rum
Allow mixture to macerate for 3 days (checking after the first 24 hours)
