Rounding out the last of the Delano's revamped bars and restaurants by way of Vegas-based Light Group is Umi Sushi & Sake Bar, in the space formerly known as Blue Sea and led under the direction of Chef Toshi Motoyama, who was trained by Chef Akira Back of Yellowtail in Las Vegas. Motoyama has previously held positions at Miami restaurants Zuma and Makoto. On the menu: signature rolls like the hotel’s namesake (and lounge) FDR, tuna, salmon, yellowtail, crab and soy paper ($26); Baked Crab Hand Roll, snow crab, soy paper and dynamite sauce ($11); and the aptly-named Delano, poached Maine Lobster, wagyu beef and black truffle ($32). Umi’s sushi and sashimi options include Bluefin Tuna Belly ($35), Sweet Shrimp ($13), Salt Water Eel ($11), and Japanese Snapper ($11).
