The creative team behind Yardbird Southern Table & Bar, 50 Eggs, have announced their next project: Swine Southern Table & Bar opening in Coral Gables in fall of 2012. 50 Eggs will call on another Top Chef alum to run the kitchen with chef Kenny Gilbert of Season 7. The food, as the name would suggest, is pork-centric, featuring a menu showcasing heritage breed hogs and fresh local ingredients. The restaurant will also focus attention to a detailed drink program featuring a bourbon program, culinary-driven cocktails, and a choice selection of craft beers.
CEO of 50 Eggs, John Kunkel compared Swine to Yardbird: "We had an abundance of great ideas when we were opening Yardbird, but we wanted to focus on poultry. Swine will feature all of the great ideas we've had for the meat side of things." Swine plans to be open for dinner, lunch and Sunday brunch.
