Swine Southern Table and Bar, the new concept from 50 Eggs Restaurant Group and Yardbird's pig sister, is in the process of menu development lead by executive chef Kenny Gilbert. Gilbert, the former Top Chef contestant and chef at Nippers Beach Club in Jacksonville, shared his love for pork with Miami New Times and explained how he was courted by 50 Eggs Restaurant Group for the new project. No surprise here, but Gilbert has been "meeting with farmers to find the best heritage pigs" and was delivered "about 1,000 pounds of pork last week". The menu will combine Gilbert's barbecue background, through the use of various wood smoking techniques, with the flavors and spices of South Florida. Swine Southern Table and Bar is set to open later this year in October.
