Battle for the best ramen is on between the two new noodle joints, Machiya in Midtown and Momi in Brickell. General Manager of Machiya, Juan Angulo, tells Short Order that their original recipe, devised by a mystery top Japanese chef, was not working consistently: "Some people said it was great; some people said it wasn't." After some bowls being returned to the kitchen (and customers likely heading to Momi), they decided to tweak it to the American palate and go with a different recipe and new chef.
