FORT LAUDERDALE— The Atlantic Resort and Spa's restaurant East End Brasserie in Fort Lauderdale switched to a farm-to-table concept after their traditional French fare was no longer working. Food and beverage manager Lydia says many tourists are European and are looking for an American dining experience, not a European one. Menu options include okra tempura, gulf coast black grouper with cippolini onion confit, rainbow chard, and smoked cheddar-andouille grit cake; and grilled ancho rubbed double center cut pork chop with ginger orange blossom honey glaze, pecan wood smoked bacon, smoked cheddar potato cake, and rainbow chard.
