The new My Ceviche location in Brickell is officially open as of today. The spot will be almost identical to the other location with the exception of the fact that here there will be ceviche bowls "paired with quinoa and rice". Not many details on further expansions, but there are plans in the works, including a New York spot and two more at the Miami International Airport. [SO]
