Nilton Castillo is officially the new man running the kitchen at The Dome Restaurant & Caviar Bar. Castillo comes with years of culinary experience, including working under Daniel Boulud and José Andrés at The Bazaar and most recently working as a line cook at The Dome.
The new executive chef tells Short Order that "his cooking has Peruvian and Spanish influences that stem from his roots" and it incorporates everything he's learned from Andrés and Boulud.
Castillo is as eco-minded as owner Rachel Dominguez' restaurant and his plans are to stay focused on seasonality and sustainability, changing the menu "according to what's available". His new additions to the menu include gazpacho, jalea salad, short rib ravioli, and Cuban frita sliders.
