By the end of the month, South Miami will be welcoming newcomer Barley & Swine (hmm ... how does Barley Swine in Austin, Texas feel about that?) to the neighborhood. Jorge Ramos of The Joint Bar & Grill (now closed), his father (also Jorge Ramos), and friend Alexis Undorfer will be opening up the affordable and friendly 60-seat gastropub "in the Metropolis building in downtown Dadeland". Ramos, who will be the executive chef at Barley & Swine once it opens, tells Short Order that he "fell in love with restaurants" and that this has been his "new passion for the last two years"; "This is all I'm doing, cooking in the kitchen". As per the cooking, Barley & Swine will be focused on "classic American comfort food with a Southern Twist and local sourcing". [SO]
