Meet the Pubbelly Group's Latest, L'Echon Brasserie

Soon, the Pubbelly team will welcome a new restaurant to its mini-empire, L'Echon Brasserie, which will be the group's sixth restaurant concept. Their latest offspring is going be located at the Hilton Cabana Miami Beach, a hotel still under construction and slated to open "late 2013", where pubbelly boys Jose Mendin, Andreas Schreiner and Sergio Navarro will "run food and beverage operations".

Mendin tells Short Order that "the restaurant's name is a play on lechón -- as in the Spanish word -- and bouchon in French. Like Macchialina, it's a made-up word". Concept wise, he reveals, "We are still working on the menu, but it's going to be a sharing-style concept with classic French dishes and a Pubbelly-style environment" and adds, "We just want to do a really cool brasserie". Get excited while they figure out the details and stay tuned for official opening dates.
