Top Chef contestant Bret Pelaggi's latest undertaking is Uvaggio, a euro-style restaurant with a strong emphasis on wine. Chef Pelaggi has paired up with passionate wine collector and owner Craig DeWald, a former HR director for American Express, and Heath Porter, who was most recently the wine director at the W in Hawaii, to open the high-end wine bar in Coral Gables on Miracle Mile. No exact opening date as of yet, but by the looks of the photos below, the team is right on track for an early February opening.
As for the development of the menu, Pelaggi tells Eater, "the menu and wines were designed cohesively, not in the traditional manner of developing a menu then picking some wines that would go ok with that food," adding that they first chose some "unique boutique small production vineyards, smelled, tasted and wrote down any and all scents, flavors and textures that came to mind" and then went on to create a menu based on their gathered information, a process they call "tasting backwards."
