Brickell's JW Marriott has just recruited a new executive chef named Alex Paz to lead the hotel's culinary program. Previously Paz held positions at other hotels like the Four Seasons in Palm Beach and Miami and PGA National Resort and Spa in Palm Beach. Most recently, he acted as the banquet chef at JW Marriott and then the executive sous chef. Now, he'll be overseeing The Trapiche Room (their Mediterranean restaurant), La Terrazza Café and Bar (their more casual, American eatery) and Isabela's (breakfast and private events), along with all banquet offerings. As for what will change along with the new chef, a rep tells us "Paz is working on upgrading all of the hotel restaurant's menus with fresh local products." A press release notes the chef sources his products from local providers, "including north and central Florida's top farmers and ranchers for home-grown meats and dairy." He'll also use "the freshest seafood options on the menus, which are modified daily."
