Scott Linquist In as Executive Chef at Coyo Taco

Former Dos Caminos, Border Grill and Arizona 206 chef brings his Mexican cuisine skills to Wynwood.

Coyo Taco has just announced a new addition to their team: executive chef Scott Linquist. The chef, a Los Angeles native who previously helmed the kitchens of places like Dos Caminos (where he was National Executive Chef) and Border Grill, comes equipped with more than 20 years of industry experience. On experience Linquist says, "I have spent the last 20 years studying the history, culture, and cuisine of Mexico" adding, "my expansive travels have led me to acquire a profound understanding of the country's diverse culinary landscape, and how it varies on a regional level. At Coyo, I'll always try to maintain the integrity of the dish, making sure to throw in my signature ‘mod-mex' twist." No word on specific menu items just yet, but reps say guests can expect traditional flavors and sustainable ingredients, as well as a farm-to-table approach with home-cooked dishes, tortillas made from scratch and guac smashed to order.

When Coyo opens in December (at 2320 NW 2nd Ave.), it will serve lunch, dinner and a late night menu. For those who want to order on the run, the restaurant will also feature a taco window for takeout options. Stay tuned for official opening dates and more as we get it.
