Coya Miami Now Hiring, Should Open Early 2015

This will be the modern Peruvian restaurant's first U.S. outpost.


Although we were told back in August that London hotspot Coya "won't be opening anytime soon," it now looks like the doors could be open in the very near future.  Operated by entrepreneur Arjun Waney, the brain behind concepts like Zuma, La Petite Maison, and Roka, among others, Coya will bring modern Peruvian cuisine to Brickell in early 2015. No official opening date has been announced as of yet, but per a Craigslist post yesterday, the restaurant will be hosting an open house hiring event on Tuesday, December 23, for just about every position in the restaurant, save for GM and head chef. And it looks like they mean business. Per the ad, candidates "must have a minimum of 2 years prior restaurant experience in a high volume fine dining environment with wine and bar knowledge."

If the photos in the ad are of the actual Miami space, we can expect posh interiors, and a bar chock full of pisco.  It also appears that there will be a sushi bar, similar to the setup at La Mar in the Mandarin Oriental, last year's mega Peruvian opening.  This will be Coya's first U.S. location, with another coming in Dubai.

With El Cielo opening up just around the corner, could 2015 be the year of big South American openings in Miami? Stay tuned.
