Stepping in after chef Norman Van Aken's departure is Victor Santos, who's taken the position of executive chef at the acclaimed Downtown Tuyo. Santos comes to the restaurant with a decade of experience in the restaurant industry including co-owning I Kyu Noodles, an Asian noodle business, opening Canyon Ranch and most recently working with Clarke Cooke House in Rhode Island. So, he has some big shoes to fill, but he seems like he can handle it.
