The Calzone at Stanzione 87 in Brickell

It's Calzone Power Hour! And we're about to bring you an hour's worth of calzone-related material, but first, behold, the glorious calzone at Stanzione 87.

If this had been a contest for the most popular calzone in Miami, then Stanzione 87 would have won it with raging, flying colors. Last week, after asking our readers "where can you find a good calzone in Miami," hoards of people emailed, tweeted and even commented (readers are usually so quiet) that Stanzione's has the best of them. So, we reached out to owner Franco Stanzione to ask him, what makes it so good? He tells us the recipe is not theirs,"is a classic recipe from Naples" and adds, " we use ricotta, fresh pepper, prosciutto cotto, sopressata, then close it up, and top it with tomatoes, house made mozzarella, parmigiano, basil and olive oil and that's how you get the best calzone in town." Easy peasy. Oh and then just "throw it in a wood fired oven at 900 degrees and make sure you don't burn it." There's the secret.
