Klime And Anita Kovaceski's New Concept, Crust

A little extra coincidental Pizza Week news: Klime Kovaceski, a chef with over 20 years of experience and owner of the former Crystal Cafe in Miami Beach, and his wife, Anita, have plans to open a pizzeria called Crust. Crust will be located somewhere on Biscayne Boulevard once it opens, though since it is in its very early stages Kovaceski prefers to keep that detail private. The chef/owner tells us they are currently in the process of developing menus, training materials and uniforms, so there is as of yet no established opening date. What is known, however, is that Crust aims to be "the best pizza in town," with a "unique" delivery service. Klime's spent his own time working in pizzerias, but he assures, "Crust is not some nostalgic waltz into my past – I'll leave the Greatest Hits routine for aging rock stars. It is, instead, a natural extension of my passion for feeding people and being part of the food world's exciting present and future." Stay tuned for more info.
