We finally know who is replacing Nicole Votano at Downtown Miami's Fooq's. Taking over the role of Executive Chef is Bryan Rojas, who most recently worked at Cypress Room serving as chef de partie. The restaurant also tapped Cypress Room's former executive chef Roel Alcudia as consulting chef through December to help oversee the transition of the new menu and new chef.
Speaking of a new menu, the lunch and dinner menus already have plenty of Rojas' dishes on it like the classic French bouillabaisse, a family-style sized Persian lamb shank, and moules frites.
