Tim Gannon, the co-founder of Outback Steakhouse and the creator of the 1,946 calorie behemoth known at the Bloomin’ Onion, has announced he is opening a new health-conscious, fast-casual concept called Bolay.
The new restaurant will debut in Wellington’s Buckingham Plaza in February 2016, he tells the South Florida Business Journal. On the menu expect customizable lunch and dinner bowls filled with items like quinoa, cilantro noodles and, of course, kale, topped with a selection of proteins, sauces and veggies. Helping to "curate" the menu is Martin Oswald who is described as "a former Wolfgang Puck protégé."
