Brooklyn-Based Carnal Brings Flinstone-Sized Ribs to its Wood Tavern Pop-Up

Gotta soak up all that booze somehow

The chefs from Brooklyn-based Carnal, known for their Flinstone-sized slow-cooked ribs cooked in bone marrow, are flying south to set up shop at Wynwood's Wood Tavern for the month of December.

In this iteration of their pop-up, however, James Zamory and Aaron Saurer are serving up a more bar-friendly menu highlighted by two signature sandwiches. One sandwich features crispy pork belly with smoked lard, chorizo and sour orange. The other, a more portable and less unwieldy variation of their most popular dish, pairs boneless beef short rib with grilled lettuce, beef fat and cotija cheese.

"The eclecticism and energy of the Wood Tavern is the perfect environment for the food we'll be serving," Saurer told Eater Miami. "The music, art, and food all working together creates a unique experience. The similarities between Brooklyn and Wynwood are becoming increasingly apparent, so we feel right at home."

Whether it's out of love for South Florida or just their hatred of the brutal New York winter, the Carnal duo says that they will be back for a second Wood Tavern stint sometime after their initial run. For now, you can catch them at Wood Tavern Wednesday through Saturday, 6 p.m. until 2 a.m.
