Construction on Soon-To-Be Open Alter Moving Right Along

Aims for early April opening

It's not every day we can report that construction is actually happening on schedule, but that seems to be the case for Alter.

The highly anticipated restaurant by executive chef Brad Kilgore, blogger-turned-restaurateur Javier Ramirez and Leo Monterrey, is on track to be completed by late March and they hope to have it open to the public by early April.

"Building a restaurant from scratch is a beautiful process but also time consuming, stressful and expensive," notes Ramirez. "Hopefully we will be able to attract crowds and become a staple in Miami’s dining scene and it will pay off."

As for the first round of menus, Kilgore notes his inspiration will be spring and seafood.

"The ingredients that come in March and April are green, fresh and bright," adds Kilgore. "I truly enjoy cooking seafood because of how delicate it can be. I want to showcase local fish and seafood that are not highlighted as much as they should be from our local waters." [EaterWire]
