He tells FineDiningLovers.com that, "Right now, we’re about to sign contract with pop-ups in Madrid and Miami…the contracts for these will come before New York, there’s a question mark at the moment with the New York project but Madrid and Miami are happening soon. We don’t have exact dates or exact locations, even which one will come first but we’re expecting January or February 2016."
The article goes on to say that this will be a "full restaurant move," as the Alinea in Chicago will close for massive renovations, allowing the restaurant to go on this world tour and do some "research and development."
He seems quasi-hopeful that he'll even get some inspiration in sunny South Florida telling that site that, "even in Miami we hope to be inspired by the culture and the ingredients." Hey, we'll take what we can get.
