Daniel Boulud’s db Bistro Moderne Miami has hired within for its newest executive chef. It was announced yesterday that the restaurant housed in the downtown restaurant at JW Marriott Marquis Miami had tapped Clark Bowen to lead the kitchen, one he has worked in as sous chef since 2011. He is replacing Jason Pringle who left the role at the beginning of the year to move back to California. Bowen, who is born and raised in Miami, is expected to put his "creative touch" on the classically French menu in the next few weeks.
