Tis the seasons for closings and chef switches. First up Wynwood's Miam Cafe who has officially tapped James Seyba as its executive chef. The switch was made a few months back but was just announced recently. Seyba, who has done stints at 27 Restaurant and the now shuttered Cena and Centro Taco, has added all day breakfast to the menu along with a rotating assortment of new specials.
As for Coral Gables' mainstay Swine Southern Table and Bar, it has tapped Food Network personality Ben Vaughn to do a temporary takeover of its kitchen for the months of July and August. During his takeover he will be "overhauling" the menu adding dishes like grilled grouper cheeks, celery root gnocchi, lamb t-bones, and rice grits. The drink menu will get a refresh too courtesy of Bar Mini alum Juan Coronado.
