Coyo’s Executive Chef to Open Traditional Mexican Restaurant on South Beach

Pro-taco slinger Scott Linquist, and the man behind Coyo Taco's popular tacos, is adding to his Mexican eatery footprint in Miami when he debuts his newest creation Olla this October, according to the Miami New Times.

The restaurant will take over the former Altamare space at 1233 Lincoln Road, on the "quieter" end of outdoor mall. And even though Linquist has made a name for himself with tacos, they won’t be found on the Olla menu. Instead expect "sharable Mexican family-style" cuisine like "moles and pork belly cochinita" served in its namesake ollas, aka a serving vessel that’s popular in Mexico.

But Linquist will stay on board at Coyo Taco as executive chef, he tells he Miami New Times, running both kitchens. And just like Coyo, Olla’s beverage program will also have a focus on mezcals and tequilas as well — and will be open well into the late night hours like 5 a.m. on the weekends.
