This fall Coral Gables will welcome Fiola Miami, outpost to the elegant flagship restaurant in Washington D.C. belonging to Fabio and Maria Trabocchi. The culinary power couple began their careers in hospitality back in the 1990’s. Fabio’s expertise in the kitchen paired with Maria’s front-of-house grace has garnered them an impressive dynasty comprised of Fiola D.C., Del Mar, Fiola Mare, and two locations of Sfoglina Pasta House. The couple have vacationed with their family in South Florida over the years and felt it was a natural next stop.
“Maria and I are delighted to open Fiola in a place which we feel a strong connection,” the James Beard Award winning chef explained.
The new restaurant hopes to combine Italy’s regional gastronomy with a nod to Miami. Chef Fabio Trabocchi will serve locally-sourced Florida specialties, such as stone crabs and spiny lobster, when in season. Additionally, he will be incorporating Key limes into both savory and sweet preparations as well as Florida mangoes, yucca, and plantains.
Fans of Fiola D.C. can expect signature dishes like lobster ravioli with ginger and chives, bucatini with red prawns and sea urchin and prosciutto wrapped veal chop with osso bucco sauce, gremolata, and hazelnuts.
With more than 8,000 bottles, the wine cellar will offer an expansive selection by the glass, half bottle, and full bottle. Hand-crafted cocktails as well as a selection of cigars will be featured as well.
While no exact date has yet been released, Fiola is expected to open sometime in November.
