Recently Closed Proof Announces Pop-Up at Taurus Beer and Whiskey House

Yes, those famous burgers are coming back too.

Just days after serving what it dubbed its final meal, Proof is opening back up — this time temporarily at Coconut Grove’s Taurus Beer and Whisk(e)y House (3540 Main Highway) starting Friday, April 20.

According to the Miami New Times, the pop-up eatery will serve plenty of the restaurant’s fan-favorites like the shaved brussel sprout salad and truffle pizza, along with new dishes like short rib pizza and dip like charred eggplant and aged cheddar fonduta. Its famous burger is also making an appearance on this menu — but there’s a catch: it’ll be available Wednesdays only with just 24 being sold. However, none of its popular pastas will be making it onto this menu.

The pop-up is in partnership with the chef behind Ariete — Michael Beltran — who is also involved in neighboring Taurus. The pop-up will last a minimum of six months, possibly longer, and will be open from 6 to 11 p.m. Sunday and Tuesday through Thursday, 5 p.m. to 1 a.m. Friday and Saturday, 2 p.m. barbecue Sunday. Closed Mondays.
