One of Italy’s most beloved pizza makers, Gino Sorbillo, is bringing his fan favorite pies to South Beach starting Wednesday, October 30, with the debut of Sorbillo Pizza (100 Collins Avenue).
Frequently touted as one of the most famous pizzaiolos in Italy, he has set on a worldwide expansion of sorts in the past few years. With eight eateries in Italy, alongside two in New York City, a newly-opened location in Tokyo, he has chosen Miami as the next city on quest his for a global pizza takeover.
The South Beach location’s menu will be executed just as it is done at the Milan outpost offering only 300 pizzas available each day served on a first come, first serve basis. Classic Neapolitan pies will fill out the menu topped with ingredients like basil pesto, ricotta, pork sausage, smoked mozzarella, sliced black truffle, and more. His famous pizza fritta, a pocket of Neapolitan-style dough that’s fried and filled like a calzone, also makes it on the Miami menu.
The rest of the dishes will be available daily until the kitchen closes, think items like veal carpaccio with gorgonzola sauce and walnuts, beef meatballs in San Marzano tomato sauce, and potato gnocchi with mozzarella. Beer, wine, and cocktails will also be served.
Sorbillo is a legend of sorts in his native Italy where he is credited for beating back crime in Centro Storico, the Naples neighborhood that’s home to his flagship pizzeria. The area was long known for being a dangerous part of town overrun by criminal activity, and is now a tourist destination — mostly thanks to his efforts. And to this day, Sorbillo’s soft-crust pies draw hours-long lines at many of his locations.
Sorbillo Pizza will be open from noon to midnight Sunday to Thursday, and Friday and Saturday from noon to 1 a.m. For more information call 305-381-0588.
