Look Inside Jamie DeRosa and Hedy Goldsmith’s Bright and Airy Eatery, Ad Lib

Jamie DeRosa and Hedy Goldsmith have officially debuted their new restaurant in Coral Gables dubbed, Ad Lib (2415 Ponce de Leon Blvd). Together with John Kunkel of 50 Eggs, the 106-seat restaurant and lounge boasts modern American cuisine that both of the chefs are known for.

The à la carte dinner menu starts with dishes like zucchini blossoms stuffed with ricotta, sumac and preserved kumquats; skewered Iberico pork with aji amarillo and Japanese pickles; and dry-aged beef tartare with caviar and white miso. Larger dishes are compiled of pasta, meat and seafood options like the New York strip served with heirloom carrots, eggplant and black sesame béarnaise; branzino with littleneck clams; and a rib cap with romanesco, hen of the woods, and ricotta dumplings in black truffle butter. A tasting menu is also available with four courses for $65 or six for $85 at the 18-seat communal Chef’s Table located on the main floor.

As for Goldsmith’s creations expect spins on the classics from the James Beard award nominee such as a strawberry pavlova with lemon curd, olive oil cake and Campari sorbet; a brown butter semifreddo with Moroccan spices, pistachio halvah and apple confit; and a bittersweet chocolate tart with sourdough gelato, blood orange marshmallows and salted caramel. Heading up the cocktail and wine programs are Sam Ross, of New York City’s Attaboy, and sommelier Daniel Toral, formerly of The Setai and Sustain Restaurant.

The 4,000-square-foot space got entire revamp from its former Swine days. The space now features whites, varying shades of blue and yellow, brass and gold accents, navy blue leather and herringbone banquettes, teak and marble tabletops, suede and leather chairs, and white brick and tiled textured walls.

Art certainly takes a front seat at Ad Lib, with floor-to-ceiling gold Montera leaves hand-painted over wood paneling by local artist Austin Kerr in the lounge, and original canvas art pieces from Los Angeles artist Tony Larson and Betsy Eby, showcased in a gallery-like setting.

Ad Lib is now open Sunday through Thursday from 6 p.m. to 10 p.m.; Friday and Saturday from 6 p.m. to 11 p.m. With lunch service starting on February 18 available from noon to 3 p.m. and brunch to follow. For more information, call 305-504-8895.
