Danny Serfer and Ryan Roman — the dynamic duo behind Edgewater’s popular seafood eatery, Mignonette — announced this week that they will be opening up a new sub shop this summer called Vinaigrette (151 E. Flagler).
With a focus solely on cold subs, the restaurant will serve up traditional subs made with items like turkey and roast beef alongside more elaborate Italian subs with different Italian cold cuts like 24-month aged prosciutto. Vegan and vegetarian subs will also be on a menu, a nod to Mignonette’s (and Blue Collar’s) popular veggie boards. Served alongside the subs will be cookies and brownies made by pastry chef Devin Braddock along with regional chips from places like Ohio and West Virginia.
As for why they decided to get into the sandwich business? Serfer cites finding a good location, with plenty of Art Deco details, in the up-and-coming Downtown neighborhood as the biggest factor. Plus, he adds, “he really likes subs,” taking his inspiration from everything from small mom-and-pop shops to Publix’s classic PubSubs.
Vinaigrette is slated to open early “summer-ish” serving lunch and dinner, along with delivery options. Stay tuned for more details.
