Gabe Orta and Elad Zvi, the co-founders of Bar Lab and the duo behind one of Miami’s best bars the Broken Shaker, are finally opening their latest project, Margot Natural Wine & Aperitivo Bar, in Downtown Miami this Wednesday, July 7.
Following a Margot pop up at Nikki Beach this past summer, the team has taken over a location inside the historical Ingraham building, located at the same location as the group’s Taqueria Hoja that debuted late last year also in the space.

Featuring a natural wine list of more than 75 options in whites, reds, and rosés, skin-contact, and beyond, the menu also includes low ABV cocktails, and a rotation of dishes by chef Jimmy Lebron, who also leads the kitchen at Bar Lab’s 27 Restaurant. The menu will include dishes like pinto gild made with anchovy, olives, and piparra peppers; swordfish crudo; tuna tiradito; and fondue all of which is meant to pair with the wines on hand.

Danya Hachey of Mad Artistic, who has served as Bar Lab’s creative director since the original Broken Shaker pop up in 2012, spearheaded the design Margot, which is named after Ernest Hemingway’s granddaughter. Described as “70’s Scandinavian meets 80’s Italian aesthetic,” the space features plenty of light colors and minimalist furniture, high ceilings, wood accents, original artworks, and a soundtrack playing over the bar’s vintage sound system.
Margot Natural Wine & Aperitivo Bar is located at 25 SE 2nd Avenue, Suite 700 in Downtown Miami. Margot is open 5 p.m. to midnight Wednesday to Sunday with extended hours forthcoming. Currently, walk-ins only with the option to reserve online in the near future.
